Today, Monday, January 9, we took a galley tour. They
prepare the food for 700+ passengers and 464 crew members. There are 76 persons
on the service staff and 68 persons who are under the supervision of the
Executive Chef.
We started off in the main galley where we saw where they
wash and keep the dishes for the dining room and room service. They wash in excess
of 1700 appetizer plates, 1000 dinner plates, 1000 dessert plates,1000 side
plates, and 2500 glasses daily.
We passed through where they do the set up for Canaletto’s,
a specialty Italian restaurant where we ate last night. Next to her was the
gentleman in charge of the napkin folding for the restaurant.
They are also working on sculptures, ice and food, for the
upcoming meals.
The galley contains all the stations for each of the types
of food that are produced, but compare to some of the ships we have seen it is
very small. It is amazing that it is so efficient. The high end restaurant on
Holland ships is called the Pinnacle Grill. It has its own kitchen to the side,
and right outside the Grill itself. Here is some of the set up for the Pinnacle
and a picture of the restaurant itself. It seats 50 people. We have
reservations for Valentine’s Day.
